Baked Chicken with Potatoes

Ingredients

1 chicken, half a kilo of potatoes, 6 cloves of garlic, parsley, breadcrumbs, salt, olive oil, lard, black pepper, cognac and water.

Preparation

We will have the whole chicken or cut into eighths or, if you want, into smaller pieces. To your taste.

We cut the potatoes into slices and in a cocotte or an earthenware casserole that we will have greased with lard we make a bed of potatoes and place the chicken on top.

We first season it with cognac and then sprinkle it with a minced garlic and parsley with breadcrumbs, we add a good drizzle of olive oil.

We put the chicken on top, season with salt and pepper and pour a glass of water or white wine around the sides of the container, cover it with foil and bake it for about three quarters of an hour at 170 degrees.

If we do it in a cocotte, it should be cooked covered for about 90 minutes at 150 degrees, and add a sprig of rosemary to give it more flavor.
