Baked Duck

INGREDIENTS:
2 kg duck, well cleaned
2 onions
2 tomatoes
2 apples
5 bay leaves
1 tablespoon thyme
Pine nuts
Plums without pits
Salt
Pepper
1 glass of brandy
1 glass of water

Baked Duck

PREPARATION:
Cut the onions, tomatoes and apples into cubes. Season the duck with thyme. Add the bay leaf and six plums, the brandy and the water.

Put everything on a tray and put it in the oven at 190 degrees.

For the first hour, put the duck upside down. Then turn it over and cook for another 90 minutes.

Remove the duck and pass the sauce through a food processor or blender. Remove the bay leaf.

We crush with a handful of plums and a handful of pine nuts. We bring to the boil for 2 minutes.

We adjust the flavour and serve.

The accompanying garnish can be turnips, carrots, potatoes, broccoli...
