Baked squid with its ink at Café Balear

The Café Balear, with a Sol Repsol, is one of the reference restaurants in Menorca, in which its traditional seafood dishes stand out, but also the new Menorcan cuisine, prepared by its chef Sergio Villalonga and which he presents to us in the room Josep Caules Arguimbau, third generation of the Caules family, who now runs the emblematic temple of seafood cuisine.

On our last visit they offered us a Menorcan-style baked squid, but with its ink, which fuses the baked squid typical of our cuisine with the squid in its ink from the Basque country.

A true example of fusion cuisine, which brings out the best of two of the great Spanish cuisines, the Basque and the Balearic Islands.
