Last Monday, September 25, Francisca Colmillo Salom, who was a cook at the La Guitarra restaurant, and widow of Biel Pascual, with whom she arrived in Ciutadella in 1969 to open the renowned winery restaurant, died in Ciutadella at the age of 93. Francisca Colmillo began as a young girl in the world of cooking and Majorcan cuisine at the hands of one of the chefs at the prestigious Formentor Hotel, and later opened the Es Fondet restaurant with her husband, Biel, on Calle Major de Muro, which was a benchmark for good cuisine throughout Mallorca, there were even clients from Palma who traveled the 50 kilometers between both towns every day to go and taste Francisca’s dishes. Later they opened the Sport Pins restaurant in Can Picafort and in 1969, they decided to take up residence in Ciutadella, opening La Guitarra, in the basement of Calle dels Dolors, where the winery and wine sales place known as Ca n’Alonso.
There the marriage is made with a good name, thanks to Francisca’s hands in the kitchen and the good service at the bar and in the living room of her husband Biel. With them came to Ciutadella the Mallorcan fried food, the Mallorcan soups, the brut rice, the tumbet, the escaldums and of course the baked suckling pigs, which were the star dish of the restaurant that, when the two of them retired, their son Biel also took over. chef and who had learned the secrets of the kitchen from his mother where he was active until last year, when Biel Pascual Colmillo retired and transferred the business, which continues to make fried food, trempó or tumbet among other legendary dishes from La Guitar.
