Girona - Chefs Ferran Adrià, Joan Roca and Oriol Castro will be part of the 2025 Girona Gastronomic Forum program. The three chefs will reflect on the creative process and innovation in the world of gastronomy. They will also talk about the meaning of running a place considered the best restaurant in the world. This talk will take place on March 18 in the afternoon, in one of the key events of this year's program that will run from March 17 to 19. The forum will be closed by the three Roca brothers with a presentation on all the new products that the Celler de Can Roca is preparing. The congress will also organize a round table with producers and chefs and another on the return to classic and traditional cuisine.
This spring Girona will host a new edition of the Gastronomic Forum, the gastronomic congress that annually brings together some of the most important names in Catalan cuisine to debate and reflect on the sector.
For now, the organizers have announced that the three main chefs in Catalonia will participate in the next edition of the congress in a joint debate. They are Ferran Adrià (founder of El Bulli), Joan Roca (chef of El Celler de Can Roca) and Oriol Castro (who runs 'Disfrutar').
The three of them will debate on Tuesday the 18th in the afternoon about innovation and haute cuisine and also about leading a restaurant that has been distinguished as the best in the world. The three chefs will talk about being the focus of all eyes and the pressure that comes with having this recognition.
In addition to this round table, the gastronomic congress will also discuss the importance of raw materials, tradition, classicism and the avant-garde. For this reason, the Forum will have a round table between producers and chefs and also a session with restaurants located in environments close to natural parks. The restaurants of Les Cols (next to the Garrotxa Volcanic Zone Natural Park), Empòrium (located in the Aiguamolls de l'Empordà Park) and Miramar (near the Cap de Creus Natural Park) will participate in this table.
The Gastronomic Forum will also discuss Catalan cuisine and choose the 25 most representative dishes, taking advantage of the fact that in 2025 Catalonia will be the World Region of Gastronomy.
On the other hand, André Bonnaure will talk about the future of foie gras and address the reasons why this food has been dethroned as one of the great gastronomic products. The chef has over 60 years of experience in the kitchen and specializes in duck dishes.
Other aspects that the congress will address are fork breakfasts, which are becoming fashionable again. There will also be a discussion of fifth-rate foods, a topic that was already addressed in the last edition.
