Ingredients: 1 kilo of lamb offal, 1/2 kilo of potatoes, 2 onions, 1 head of garlic, 4 red peppers, 1 can of peas, 2 bay leaves and a chilli pepper (optional).

Preparation: In a frying pan with olive oil, we will first fry the offal cut into small pieces with the garlic cloves, bay leaf and peas. If we want it to have a spicy touch, we add a chilli pepper.

Once the offal is fried, we put it in a clay pot. In the same oil we then fry the diced green peppers, take them out, put them in the casserole with the offal and do the same with the onions, and to finish the potatoes, which will need more oil.

Once all the ingredients are in the saucepan, we mix, add salt, and stir. We make everything caramelized, being careful not to burn it or stick to the bottom of the casserole, and it is ready to serve.
