This week, thanks to VINUM-Menorca, we recommend a French wine, Laurus, a single-variety Viognier, from the Pays de Oc appellations and classified as Vin de Pays, made in the Languedoc-Roussillon Viogner style.
A quality wine at a good price and more than interesting for the Christmas and New Year holidays.
Appearance: Beautiful golden tunic with bright green hues.
Nose: Generous and opens with aromas of peach, pear and honey.
Palate: Complex and elegant with apricot flavors, typical of the Viognier grape.
It pairs with white meats, especially poultry, pork, blue fish, seafood and spicy dishes, even those with a spicy touch.
This wine will go very well with the typical roasts of our Christmas and New Year's holidays, such as capons stuffed with meatballs, turkeys stuffed with marzipan, roast chickens or game birds such as quails stuffed with pasture or pigeons with salmon.
Try it to accompany roast suckling pig, pork loin with Alaior apples, pork with prunes, dried apricots and quinces in the oven. Also a roast leg of pork accompanied by winter apple compote.
It will pair with grilled blue fish such as salmon, baked chops and squid with potatoes; grilled red mullet in a sauce made from its liver or dishes from world cuisines such as tuna tataki or salmon tartar.
It goes well with exotic dishes with a spicy touch such as red chicken, shrimp or vegetable curries. Asian cuisine dishes with sriracha, Zaozhuang spicy chicken or Sichuan-style pork, as well as Mexican cuisine dishes where the protagonists are jalapeños, chipotle or Mexican green sauce that will accompany tacos, enchiladas and tlayudas, among others.
