Ana Marquès Hidalgo/Ferreries - Menorcan mussels are very tasty, simply steamed or grilled they are delicious, but I propose this more exotic and spicy recipe, a magnificent journey of flavors!!
– 1 kg of Mussels
– 1/2 red onion
– 1 tablespoon of red curry paste
– 350 ml of coconut milk
– Fresh chopped coriander
– 1 garlic
– 1 lime
– 1 tablespoon of extra virgin olive oil
– 1 tablespoon of ginger
In a saucepan we put the olive oil, add the finely chopped red onion, the garlic and the grated ginger.
We fry over low heat for about 10 minutes.
Mix everything very well and then add the coconut milk and the tablespoon of red curry paste. Put it on high heat and let it reduce carefully so that it does not burn.
We must achieve a slightly thick texture because when the mussels open they will release water. When we have the desired thickness we add the mussels and remove it from the heat when they open.
Serve with a little chopped fresh coriander and lime juice.
