Menorcan style macaroni

Ingredients: 500 g of macaroni pasta, 1 kilo of minced meat (1/2 pork and 1/2 beef), a good sauce (onion, tomato, green pepper, garlic), grated aged Menorca cheese, butter, olive oil, thyme or marjoram and salt. Optionally two eggs.

Preparation: In a pot we will boil the macaroni, better if they are whole grain and made with organic wheat, with water, salt and a splash of oil. Meanwhile, in a frying pan we will sauté the onion, green pepper, garlic and tomatoes, all finely chopped. When the sauce is ready, add the minced meat, season with salt and pepper and add a couple of teaspoons of thyme or marjoram. The meat should be well done and well mixed with the sauce.

We will spread a clay pot with butter and put the macaroni and the sauce with the minced meat on top of the macaroni. We mix it well so that the pasta joins with the sauce. We cover with a layer of grated aged or semi-cured cheese, we put two or three nuts of butter on top and, if we want, we spread two beaten eggs on top.

Bake for about twenty minutes over moderate heat. It will be ready when the cheese has melted and the top of the macaroni is slightly charred.
