Bep Al·lès/Ciutadella – Thanks to Vinum Menorca, today we recommend a wine that you will surely fall in love with from the first sip. It is Paco García Seis, a sweet, aromatic and uninhibited red wine. A young wine with a short time in the barrel that preserves all the fruity richness of the Tempranillo grape and maintains a sweet and perfectly harmonious palate. A modern Rioja wine that makes the best pairing to share with your friends or family. Without a doubt, Paco García Seis is the most casual wine from the winery and where the winemaker Juan Bautista García seeks all the freshness of his wines from Finca Los Seis. A wine that will leave a mark on you.
Appearance: Blackberry and ruby ??red color, clean and bright.
Nose: Intense entry where fresh red fruit, floral tones and the sweetness of the blackberries stand out.
Mouth: It is round, full and pleasant. With a good mid-palate, where a light touch of wood and caramel emerges. Long and pleasant aftertaste.
It pairs perfectly with light cheeses, salads, white meats and fish.
It is the ideal wine to share at home with a board of various raw cow's milk cheeses such as those from S'Aranajassa, especially its buttery semi-cured cheese which is now at its best. Also Galician cow's milk cheeses such as those from Tetilla or Arzua-Ulloa. It also goes with tender sheep's and goat's milk, as well as smoked cheeses such as Idiazabal or San Simón de Acosta.
Ideal if we accompany this cheese board with salads such as arugula and lamb's lettuce with apple, walnuts, raisins and pine nuts, dressed with organic Morverda Vell oil and Fornells salt. Also goat's cheese salads with pine nuts and pomegranate seeds, or endive, bacon, apple and walnuts. Avoid salads where tomato, vinegar or vinaigrettes predominate.
It will pair well with Menorcan dishes of white meats such as chicken with plums, rabbit with figs, rabbit with onions, roast chicken stuffed with meatballs, quail stuffed with marzipan, rabbit or chicken with garlic, chicken with prawns, rabbit with lobster or with crayfish.
Paco García Seis is one of those wines that breaks the myth that red wines do not go well with fish. It goes wonderfully with baked fish with potatoes, with salted fish, with monkfish with almond or hazelnut sauce, with fried ray, or grilled blue fish such as mackerel, sardines or salmon, as well as Mallorcan-style fish dishes, such as grouper.
