Rabbit with peppers

Ingredients

2 rabbits cut into pieces, 1 onion, 1 green pepper, 4 ripe tomatoes, 6 cloves of garlic, parsley, 6 roasted and peeled red peppers, sugar, a bay leaf, allspice and salt.

Preparation

First of all, we will make a stir-fry with the onion and bay leaf, the green pepper, the garlic and the tomatoes. We add a teaspoon of sugar to kill the acidity of the tomatoes. We add the pieces of rabbit that will have been prepared for us at the butcher and we will salt and pepper them.

Separately, we will have put the 6 red peppers in the oven with a good drizzle of oil on top, and once roasted we peel them, remove the seeds and cut them into strips that we will add to the casserole with the stir-fry and the rabbit.

It is a dish that if left to rest for a couple of hours is better than eaten right away. It can be eaten plain or reheated.

To accompany it, we will have a nice plate of French fries with garlic and bay leaves in the middle of the table.
