- Preparation: boil the chestnuts for 15-20 minutes. In a pot, fry the onion and then add the pumpkin and the vegetable broth, boil for 20-30 minutes. Add the chestnuts and the spices and grind everything together.

- Preparation: melt the butter and fry the onion and garlic. Then, add the rice and toast for a few minutes, until it is slightly golden. Add a glass of white wine and let it evaporate completely. Then, start adding the stock (add a glass, and keep stirring, wait until all the stock has evaporated before adding another glass). When the risotto is half cooked, add the mushrooms and chestnuts. When the rice is cooked, remove the pot from the heat and add the butter and Parmesan cheese, mix well so that it melts and add the spices to taste.
