Rice with chicken and chanterelles

This year has not been a good year for mushrooms in Menorca, and we have seen few chanterelles and if we wanted to cook a dish from our autumn recipe book we had to opt for the Catalan rovellones or the chanterelles from Castilla to make, for example, a rice like the one we recommend today, with free-range chicken and chanterelles.
