The Regulatory Council IGP Sobrassada de Mallorca participates in the XXIII edition of Madrid Fusión, which takes place on January 27, 28 and 29, 2025 at Ifema, within the stand promoted by the Mallorca Tourism Foundation of the Consell de Mallorca.
The presence of Sobrassada de Mallorca at Madrid Fusión is an opportunity to consolidate its presence in haute cuisine, promoting higher consumption at a local level and strengthening the connection with Mallorcan culinary roots. This not only enhances its value at a national level, but also seeks to position it as a prestigious exportable product.

The stand will offer a varied programme of activities that will include different showcookings in which Sobrassada de Mallorca will be used as the main ingredient by chefs Javier Hoekbeeck, Michelin Star and chef of the Four Seasons Formentor Hotel; Javier Irazusta and Xesc Reina; Ariadna Salvador, Ninumà Andrés Benítez, from the Botànic restaurant at the Hotel Can Bordoy; Irene Martínez, from the Nus restaurant, and Cati Pons, from Fogons de Sa Plaça. A sample of the versatility that will be evident in creations ranging from traditional recipes to the most innovative interpretations of haute cuisine.
In addition, there will also be several talks on sobrasada and the production process, following traditional methods and complying with strict quality standards. And as on previous occasions, there will be an informative space on the registered producers, with details on the guarantees of the IGP quality seal, recipe suggestions, illustrative videos on the tasting process, and the advantages of working with a product endorsed by this certification.
