The event, organised by the Royal Academy of Gastronomy of Spain in collaboration with the CEU University Institute “Food and Society”, will take place from 27 to 29 March 2025 at the facilities of the CEU San Pablo University in Madrid.
The central axis of the SPANISH GASTRONOMY CONGRESS is defined in view of the fact that the concept of gastronomy as an eminently recreational activity has become somewhat obsolete and that the other dimensions of the gastronomic value chain, which cover production, distribution, processing, consumption and waste management, must be taken into account in a multidisciplinary and international approach. For this reason, the objective of the Congress is to address from a scientific, academic and professional point of view this new social, economic, psychological, medical and cultural scenario of this new interpretation of gastronomy. The criteria of sustainable production and healthy eating naturally complement the traditional concept of enjoyment associated with gastronomy.
For this reason, we will bring together researchers, academics and professionals from different fields of science, academic disciplines, research networks and policy areas to discuss this new framework for defining gastronomy as an integral activity, with a main focus on nutrition, health and sustainability.
As a prelude to the celebration of the SPAIN GASTRONOMY CONFERENCE, on November 20 and 21, 2024, the Expert Meeting 'Destination Madrid: Quo Vadis Gastronomy and Nutrition? ' took place at the University's headquarters, in which the key importance of working together on nutrition and gastronomy to eat better, enjoy and do so sustainably was highlighted.
