Bep Al·lès / Ciutadella – This week, thanks to VINUM-Menorca, we recommend an Atlantic wine from the Adegas Pazo do Mar. It is the Torre do Olivar Expresion Blanco, a family white wine made with Treixadura grapes and belonging to the DO Ribeiro. It has a limited production of 30,000 bottles.
Appearance: Pale yellow with greenish notes
Nose: Aromas of fresh fruit (apple, stone fruit), citrus notes and a slight floral component.
Taste: Fresh and balanced. Light and with a very good mouthfeel.
It pairs with cold starters of fish, seafood, fish and white meats, as well as Asian cuisine and Iberian sausages.
It is the ideal wine to accompany Galician-style scallops, Arnoia peppers and Galician tuna or cockle empanadas.
Clams in a sailor's sauce, steamed mussels and cockles, Galician-style octopus, as well as grilled razor clams and natural barnacles.
Galician-style turbot, grilled red mullet, fish and seafood stew, baked picuda with potatoes, monkfish with almond sauce, cuttlefish stuffed with monkfish and prawns, stuffed squid.
Chicken fideuada with crayfish, rabbit with onions and lobster, roast turkey with sour pomegranate sauce, capon stuffed with couscous and chicken breasts with almond sauce.
It will pair with Iberian ham, smoked cheeses such as San Simón de Acosta or Idiazábal, and also our carn i xulla. Semi-cured cheeses made with cow's milk and pâtés.
It is the perfect accompaniment to Asian dishes such as chicken or shrimp curry, tatakis and tuna or salmon tartars, as well as sushi or traditional Cantonese dishes such as shrimp tempura, shrimp with sweet and sour sauce, chicken with almonds or seafood chop suey.
