This week, thanks to VINUM-Menorca, we recommend a Verdejo that is gradually gaining a strong position on restaurant menus. This is the Tragón Verdejo 2021, a single-varietal with a fruity aroma that is made at Celler y Vinyes Vicaral, from old vines at an altitude of 750 metres. This is a refreshing wine ideal for what remains of spring and winter and to enjoy it with a fish or seafood dish in good company. It belongs to the DO Rueda, in Valladolid
TASTING
Appearance: Lemon yellow colour with greenish reflections. Pale and elegant in the glass.
Nose: Intense and rich in aromas, especially of fresh tropical fruit such as ripe pineapple, citrus and Grammy Smith green apple, as well as the typical hay notes of Verdejos.
Palate: Fresh, balanced and very fruity. Ripe sea melon, apricot, lemon pear and tropical notes such as lychee.
PAIRING
Mango and gorgonzola ravioli, black noodles with grilled salmon, macaroni with cream sauce and green curry, penne puttanesca and tiger prawns with coconut milk and turmeric.
Vegetable tart, eggplant pie, San Sebastian-style scorpionfish pie, fish cannelloni, creamed spinach.
Grilled volandeira, red prawns in three textures, grilled crayfish with garlic and parsley, Roman-style or Andalusian-style squid, battered sea nettles or prawn tempura.
Clams with green sauce, baked mussels au gratin, cockles with American sauce, grilled rock mussels, grilled razor clams or engraved escupiñas from the port of Maó with Gin Xoriguer.
Lobster or crayfish stew, monkfish stew and red prawns from Ciutadella, fish and seafood broth rice, prawn paella with oloturias, creamy octopus rice and sweet black pork ribs.
